Features:

Pecorino of Filiano PDO is a hard semi-cooked cheese, made from whole ewe's milk. The wheel is characterized by the marks of the typical baskets in which the cheese is kept. Its rind is of a golden yellow to a dark brown colour based on the length of seasoning, while the texture, grainy and crumbly, is white to straw-yellow in colour and has a compact consistency, with small aeration holes. The flavour is sweet and delicate in the freshest cheeses, but becomes slightly spicy when the minimum length of seasoning has been reached.
How to distinguish it:

The wheel must bear the product logo imprinted on fire, represented by an oval with a letter F and the words 'Pecorino di Filiano', and the name, the indication PDO and the Community symbol. The product is sold in whole wheels or portioned, into parts corresponding to half or quarter of the certified wheel.
